Aired 13 January 2023, and what was to be the final ‘Hairy Bikers Go Local’ episode, Si and Dave visited the River Tweed Wild Salmon Company to learn about the art of sustainable Net and Coble fishing. After a day on the Tweed the pair had the ingredients needed to prepare a dish of gravadlax and confit of wild salmon, the first of three dishes for Scandinavian chef Alex, who runs the Michelin starred restaurant Hjem at the Hadrian hotel in Hexham.
